Yum Pumpkin Bread

INGREDIENTS

1 1/2 Pumpkin Puree

3 Eggs ( Large, XL or Jumbo)

1 Tbsp Vanilla

1/4 Cup ( your Choice of sweetener) Honey, Agave, Maple Syrup, Sugar free Maple Syrup

1/4 Cup Coconut Oil or Oil of choice

2 Cups Almond Flour ( Fine Grade)

1/2 Tsp Salt

1 tsp baking soda

1 tsp Pumpkin pie spice

1 tsp Vanilla

Optional Add In’s  Rasins, Crasins, Currents, Roasted Chopped Pecans, Sugar free Chips ( lily’s or Hershey)

INSTRUCTIONS

  1. Preheat oven to 350F.
  2. With a blender or food processor mix pumpkin, eggs, vanilla, raw honey and coconut oil together.
  3. Add the almond flour, salt, cinnamon, pumpkin spice and baking soda and mix well.
  4. Pour batter into a well greased 5×9 loaf pan.
  5. Bake for 50 minutes.
  6. Allow cooling completely before serving.
