Popovers ( Low Carb)

with Rain and storms scheduled for the next two weeks.  how good does Winter comfort food sound??  Well, Popovers can be a Winter or a summer side.  and these are low carb which make them even better

3 Eggs. Room temperature

1 1/4 Cups Milk, at room temperature ( or your choice of milk alternative)

1 1/4 Cups Fine almond Flour

1/4 teaspoon Salt

 

Heat oven to 450 degrees.  In a small mixer bowl beat eggs at medium speed, scraping bowl often, until light yellow 1 to 2 minutes.  Add milk, continue beating for 1 minute to incorporate air.  By hand, stir in remaining ingredients.  Pour batter into greased 6 cup popover pan or 6 Custard cups.

Bake for 15 minutes, reduce temperature to 350 degrees.  DO NOT OPEN OVEN DOOR.

Bake for 25 to 30 minutes or until golden brown.  Insert knife in popovers to allow steam to escape.

Serve immediately.
