2 Tbsp Olive Oil
2 Tbsp Lemon Juice
1/2 Tsp Dried oregano, crumbled
1/4 tsp salt
1/8 tsp black pepper
1 clove Garlic, minced
1 1/2 pounds boneless chicken or flank or Skirt steak cut into cubes
Cherry Tomatoes, Onion Wedges and Mushrooms (washed and stems removed). Bell Peppers (red, green, orange, purple) cut into wedges
I a large bowl, combine the oil, lemon juice, oregano, salt, pepper an oil, lemon juice, oregano, salt, pepper an garlic; Keep some marinade on the side for basting. Add the Steak or Chicken to the mixture and marinate for 20 to 25 minutes at room temperature. About 5 minutes before you are ready to cook the kebabs, pre-heat the Broiler or Grill.
Remove the Steak/Chicken from the marinade and thread it onto Skewers ( Soaked Bamboo or Metal) alternating with tomatoes, bell peppers, onion and mushroom.
Grill or if Broiling broil 4 inches from the heat for 3 minutes on each side basting occasionally with the marinade.
