1 large head of Romaine ( or use a mixture of romaine, red leaf and green leaf)

2  Tbsp Apple Cider Vinegar

1 Tbsp Extra Virgin Olive oil

1 tsp Extra Virgin Olive oil

1/2 Cup Feta Cheese

1 Tbsp or to taste Liquid stevia or Agave

1 small shallot

Optional – 2 cups Blueberries or sliced strawberries

Optional – Roasted pecans chopped

Optional – Sliced Onions, Carrots

Optional – Grilled Chicken or Steak

 

  1. Wash and dry Greens and tear into bite-sized pieces.
  2. Use a food processor/blender to puree feta, vinegar, olive oil, sweetener & shallot  blend until smooth.
  3. Toss greens with dressing and add your Options that you desire to make the salad your own
  4.   Make ahead Tip –   the dressing can be made ahead up to two days.
