CHICKEN PARMESAN (LOW-CARB, KETO)

  • lb boneless skinless chicken breast
  • 1cup almond meal or Coconut Flour
  • 1cup grated Parmesan cheese
  • 1teaspoon italian seasoning
  • egg, Whisked
  • ounces mozzarella cheese
  • 1cup marinara sauce  of choice

 

  1.  Preheat oven to 350°F.
  2.  Line a baking sheet with foil.
  3.  if your Chicken Breast are bigger then the norm; Slice the chicken breasts in half  to make thinner and faster cooking times.
  4.  Mix almond or/Coconut meal/flour, grated Parmesan, and Italian seasoning.
  5.  Whisk the egg in a separate bowl.
  6. Dredge the chicken in the flour mixture and then dip into the egg mixture and then back to the flour.
  7.  Place “breaded” chicken breasts on baking sheet.
  8.  Bake for 25-30 minutes or until internal temperature reaches about 160°F.
  9. 9. Take out the chicken out of the oven and top each piece with equal amount of sauce and mozzarella.
  10.  Place back into the the oven and Bake until cheese melts.
