- 2 teaspoons olive oil
- 2 – 3 cloves garlic, minced
- 1 1/4 pounds
- baby spinach, washed and drained, but not dried
- 1/2 lemon, juiced
- zest of 1/2 lemon
Heat oil over medium-high heat in a medium or large pot with a lid. Add garlic and cook until fragrant, about 30 seconds. Carefully add the spinach and toss with the oil and garlic. Cover and allow to wilt, about 2 minutes. Remove from heat, drain off any water and season with lemon juice and zest. Serve immediately.
