Creamed Spinach

A small casserole dish of spinach in cream sauce


1 big bunch fresh spinach
1 Tbsp. olive oil
1 Tbsp. Coconut flour
1/4 tsp. salt
1/4 tsp. nutmeg
1/3 cup oat or unsweetened Milk Of Choice
1/4 cup grated cheese or substitute


  1. Wash spinach well and remove tough stems. Place in a pot with about an inch of water and bring to a boil. Stir well. Cook, covered, 3 minutes. Drain and let cool slightly.
  2. Heat a small, fairly deep skillet with a lid. Mix coconut flour, nutmeg and salt together. Add oil to skillet and sprinkle in flour. Cook, stirring, for 1 minute. Add milk and stir well. Let cook until slightly thickened, 2-3 minutes.
  3. Squeeze excess liquid out of spinach. Add to sauce, stir, and cook covered for 2-3 minutes. Stir in cheese and serve at once.
