Onion Dip

The holidays are right here and what perfect time of the year to do a fresh Onion dip

2 yellow onions

2 tsp. oil

¼ tsp sweetener of choice

Salt

1 cup sour cream

1 cup cream cheese

½ cup mayonnaise

1 Tbsp. fresh thyme

1 tsp. lemon juice

Peel and slice the onions as thinly as possible. Sprinkle with sweetener and cook in oil over very low heat, stirring once in a while, until limp and pale golden brown, about 40 minutes. Let cool.

Blend sour cream, cream cheese and mayo together. Stir in onions and any juices that have collected along with the thyme and lemon. Taste and adjust seasonings. Best if made at least 1 hour ahead of time.
