
Ingredients:
4 zucchini
8 oz. ground turkey
½ cup minced onion
½ cup minced bell pepper
12 mushrooms, minced
salt
1 clove garlic
1 tsp. oregano
¼ cup vegetable broth
Optional Cheese for topping
Instructions:
Cook zucchini in boiling water 6 minutes. Drain and cool, then hollow Cook turkey until just done. Sauté squash insides & other veg until tender. Add garlic, oregano & salt. Stuff zucchini & put in dish top with optional cheese. Add broth to dish and bake, covered, at 375° for 20 minutes. Remove cover and bake 10 minutes more or until tender.
