
¾ cup butter (room temperature)
½ cup sweetener of choice
1 egg
3 Tbs lemon zest
2.5 Cup Almond meal
1/2 Cup coconut flour
1/2 Tsp Xanthan Gum
1/4 Tsp salt
1/2 Tsp Baking Soda
Cream together the butter and sweetener. add in 1 egg and zest and beat /blend together. Add in the remaining ingredients and mix to incorporate
Roll into ball and wrap in cling wrap. Refrigerate over night (or an hour)
Roll out 1/4 inch thick. Cut into shapes, squares or use cookie cutters.
Bake 175’ for 10 minutes. while hot dust with some sweetener of choice ( optional) Let cool completely before handling
Options – change out the Lemon Zest for Orange Zest or even Grapefruit Zest. add in some fresh chopped rosemary.
