Blood Orange Curd

Thank you to my Dear friend Carly for giving me some delicious Blood Oranges and Meyer Lemons. as they say when life hands you lemons while in my case it was lemons and oranges. what do you do?? I like trying to be positive. so I positively made some delish Curd.

3 Eggs

3 Egg yolks

1/3 cup plus 1 Tbsp Sweetener of choice I used Swerve

1/4 Cup Fresh squeezed Blood Orange juice – or any type of Orange of choice

1/4 Cup Fresh Squeezed Meyer Lemon or regular lemon Juice

1 Tbsp Zest of Orange

1 Stick of Butter – softened and sliced

  1. In a large Stainless steel mixing bowl or pot, whisk together eggs yolks, and Sweetener of choice. Whisk in the blood orange juice, Lemon juice Juice and zest.
  2. Bring a pot of water that will accommodate the bowl or the pot that you are working in to a simmer. Place bowl/pot over simmering water and cook curd, while stirring with a whisk. Continue to cook until curd begins to thicken, about 10 or 12 minutes. Remove from the heat.
  3. Whisk in butter until melted and well combined.
  4. Pour into Canning jars or containers of choice and chill for 2 hours before enjoying
