Ingredients
- 1/2 red onion sliced thin
- 2 zucchinis cut into noodles spiraled
- 1 cup grape tomatoes halved
- 1/2 cup kalamata olives halved
- 1 cup artichoke marinated
- 1 cup feta cheese
Dressing
- 2 Tablespoons white or Red balsamic Vinegar
- 1/4 cup olive oil
- 1/8 t salt
- 1/8 t pepper
- 1/2 t oregano Fresh or Dried ( Chopped Fine)
- 1/2 t crushed garlic
- Prep your zucchini to make noodles.
- Whisk together your dressing and toss with the zucchini.
- Add the remaining ingredients except for the feta cheese and Toss.
- Top with the feta cheese and enjoy!
