New Years Day Good Luck Black Eyed Peas

It is a SoutSouthern tradition States that the first food to be eaten on  New Year’s  Day should be black eyed peas  for luck and prosperity — specifically, one  pea for each day of the year. To really ensure a good year, add a mess o’ greens for wealth

Back Eyed Pea’s Stew

 

1 lb. fresh or dried black-eyed peas, rinsed and picked over 
1 cup chopped  onions
2 cloves garlic, peeled
1 qt. or more water, as needed
34 tsp. salt
12 tsp. freshly ground black pepper
14 tsp. Hot Sauce
12 lb. smoked sausage Your  Choice of meat
14 cup chopped fresh parsley leaves
12 cup chopped green onions
cooked rice to serve over or mixed in.
 ♥ Combine the peas, onions, garlic, water, salt, black pepper, Hot Sauce, and sausage in a large, heavy pot or Dutch oven. Bring to a boil, then reduce the heat to medium-low and simmer until the peas are tender and creamy, 45 minutes for fresh peas and about 2 hours for dried peas.
♥Stir in the parsley and green onions and cook for about 2 minutes longer.
Serve either over Rice or Mix it in.
This can also be made in an Instant Pot.   cook time 8 minutes
