Spinach Chicken Salad with a Ginger Soy Dressing

 

1/4 Cup Pomegranate Seeds

Shredded/Diced Cooked Chicken ( or Protein of Choice)

2 Tbsp Orange Juice

2 Tbsp Lemon Juice

2 Tbsp Minced Shallot

1 Tbsp Soy Sauce

1 Tbsp Dijon Mustard

2 Tbsp Minced Peeled Ginger

1 tsp sweetener of choice

2 Tbsp Olive oil

1 1/2 Lbs Spinach ( washed/dried)

1 medium Cucumber , thinly sliced

1 cup thinly sliced red onion

 

in a large serving bowl, whisk together the orange juice, lemon juice, shallot, soy sauce, Dijon mustard, ginger and sweetener.  gradually whisk in the oil in a slow, steady stream until emulsified.  season with salt and pepper.  Add the spinach cucumber, and red onion.  Top with Pomegranate seeds and chicken. and serve.
